Job Description

    Roles and ResponsibilitiesFUNCTIONAL RESPONSIBILTIES: (Incharge of entire F&B Operations of the zone)
    • Menu planning and re-engineering with DVP F&B, Regional Director and vendors for the region. Ensuring standardization in Menu/products across the region.
    • Strategic planning for the department keeping in view the following aspects: 1) Financials: Roadmap for driving F&B Growth. 2) Cost control procedures. 3) Revenue and expense budgets on early basis. 4) Maintaining interdepartmental relationships. 5) Reviewing feedback from guests and implementing solutions to resolve them. 6) Advertising and promotion: Planning promotions for festivals and special events.
    • Involvement in the renovation of existing outlets and opening of new ones.
    • Ensures that pre-opening activities are co-ordinated with accurate target dates and ensuring that look and feel, Cost input, Budgeting, Manning Levels., Pre Opening set up, Operations, System & Process are as per the Multiplex standards.
    • Ensures that REFUEL standards are controlled and maintained using the inventory package for quality products service budgets RPP - Food cost and menu engineering.
    • Ensures that Yields are controlled and analyzed and measures implemented to initiate new processes. Auditing units during visits and supporting in action plan for closure.
    • Competition visits and market analysis to be at Par and excel with new concepts.
    • Training of team on F&B process as per SOP during visits and team meets.
    • Supporting Kitchen team in procuring vendors for raw materials.
    • Review kitchen team performance in coordination with Head chef.
    • Ensures that the supply chain/inventory management is managed and controlled locally and offer assistance for equipment breakdown and logistical challenges.
    Ensures that quality for all food and beverage service is maintained through SOP and audit implementation across the region as per Multiplex policies.Ensures that new and existing vendors are evaluated and finalized across all units in the region in coordination with DVP F&B and COO.Ensures that revenues in food and beverage are maximized using cross promotional activities. Ensures compliance with all legal requirements in connection with F&B operations.Implement and monitor promotions and events.Reviews weekly, monthly reports, forecast report and any other report pertaining to the F&B operations.To perform any other duties as may be assigned by the management from time to time.Introductions of new promotions, concepts and ideaDesired Candidate ProfileBHMPerks and Benefits,
