    Chef De Cuisine(Commissary)What is in it for you:Employee benefit card offering discounted rates in Accor worldwideLearning programs through our AcademiesOpportunity to develop your talent and grow within your property and across the world!Ability to make a difference through our Corporate Social Responsibility activities, like Planet 21.What you will be doing:Behaves and acts in an exemplary fashion, embodying the brand mindsetOversees the whole work shift: ensures respect of the maximum waiting times defined by the brand, checks the presentation and temperature of dishes, etc.Coordinates with restaurant serving staff in order to ensure that service runs smoothlyDevelops excellent relationships with guestsInnovating and creating approach to producing and decorating dishesKeeps cooking instructions up-to-datePrepares the kitchen in line with level of activity and revised forecastsPay attention to food cost, but not be constrained by it in search for creating new and original product.Ensures that all information is duly passed on to the applicable departmentsIn conjunction with the Points of Sale Managers, coordinates the kitchen, restaurants and Seminars and meetings servicesSupervises the kitchen staff and stewarding serviceAttends the weekly kitchen meetingsIs actively involved in the local area to keep up-to-date with specific issues and needsAssures hotel management cover early mornings, evenings, weekends and on bank holidaysAttends meetings for Heads of DepartmentKeeps track of the standard of services delivered based on guest comments and quality auditsMakes suggestions for improvementEnsures that the equipment and appliances under his/her responsibility are used correctly and kept in good condition by kitchen staffConduct the business honestly and fairlyUse your own initiative and good judgement to solve problems in a clam an efficient wayParticipates in investment decisions for the kitchenEnsures the workplace remains clean and tidy and the due application of the HACCP hygiene rules at all timesRespects the instructions and safety guidelines for all equipment usedApplies the hotels security regulations (in case of fire etc)Respects the hotels commitments to the Environment Charter (saving energy, recycling, sorting waste etc)Your experience includes: With significant Commissary experienceVocational certificate or diploma in professional cuisineManagement experienceKnowledge of HACCP guidelinesYour skills includes: Established asian cuisine/similar cuisine cookingAbility to lead and train othersFlexibility and responsivenessProactiveCreativeAttention to detail and qualityWell organisedAbility to work in a teamPhysical and mental staying power8 to 10 years of experienceAcknowledged managerial skillsPerfect knowledge of HACCP guidelinesComputer literate in the Windows environmentWhy work for Accor We are far more than a worldwide leader.
