7 years plus of experience in high volume and / or cinema , retail or restaurant operations Responsibilities : a) Control over food ordering and storage to avoid wastage of food (Forecasting to be done properly). b) b) Ensures that high standards of sanitation , cleanliness and safety are maintained throughout all kitchen areas at all times. c) c) Ensure all process lay out , being followed by the Kitchen team. Also the stocks received from vendors are of right quality and stored at the right temperature and dispatched maintaining right quality and temp. d) d) Check and update the food recipes regularly & give training to the team. e) e) Working knowledge of HACCP (Hazard Analysis and Critical Control Point) must be practiced to prevent contamination and deterioration of any perishable item. f) f) Exhibit high level of product knowledge of the Menu (Including Signature Dishes). g) g) Understands the SHOW BIZZ system processes , related to transactions. h) h) Ensure food preparation and delivery time adheres to give the best experience to Guest. i) i) Ensure Control of food cost & wastage ensures that food cost , wastage and profitability are maintained as per defined targets. j) j) Ensure that the Kitchen team roasters are well planned , especially nearing big days.
