Job Description

    A Kitchen Stewarding Manager oversees the back of house sanitation, equipment maintenance, and cleaning operations, ensuring compliance with food safety regulations. Key responsibilities include managing stewarding staff (scheduling, training), controlling inventory of china, glass, and silver, managing waste disposal, and maintaining spotless sanitation standards for kitchens.Core Roles and Responsibilities
    • Team Leadership & Management: Supervise and train kitchen stewards, create staff schedules, manage performance, and foster a team environment.
    • Sanitation & Hygiene Standards: Ensure compliance with Food Safety regulations and health and safety laws.
    • Inventory Control & Maintenance: Conduct inventories of china, glass, and silver, manage equipment inventory, and track cleaning supplies to prevent shortages.
    • Equipment Care & Safety: Maintain cleaning machinery (dishwashers) and ensure proper use of cleaning chemicals (Coshh guidelines)
    • Waste Management: Oversee the proper disposal and recycling of kitchen waste.
    • Operational Support: Coordinate with chefs to ensure clean equipment is available for food preparation and service.
    Key Skills & Qualifications
    • Experience: Previous experience in a highvolume hotel or restaurant kitchen is often required.
    • Knowledge: Deep understanding of Haccpstandards, cleaning chemicals, and sanitation procedures.
    • Physical Ability: The ability to work in a fastpaced, physically demanding environment, including standing and lifting.
    • Leadership: Strong communication skills to liaise with the culinary team and management.
