Duties and Responsibilities ; Only designation with Executive Chef Reporting to the Executive Director Position Title, responsibilities and essential job functions include but are not limited to the following: Plans, directs, controls, coordinates and participates in the activities of all kitchen personnel engaged in preparing and cooking food. Establish and maintaining the recipe library and plate specification. Ensuring a profitable food production level according to the set goals. Ensuring the purchase and utility of the highest quality of food stuff. Maintaining the highest standard of hygiene in the Food Production area. Exercising administrative authority over all kitchen staff. Oversee the proper implementation of established standard quality in the kitchen. Developing and introducing unique and innovative recipes and menu items. Plan and approve utilization of food supplies. Controls daily the market list purchases. To ensure that the Department Operational Budget is strictly adhered to. To monitor all cost and recommend/institute measures to control them. To review monthly forecasts and schedule resources accordingly. To ensure that all outlets, banquet and kitchen is managed efficiently according to the established Standards. To ensure each Food & Beverage outlet and banquet is managed successfully as independent profit center. Administrative responsibilities: To understand and strictly adhere to the Rules & Regulations established in the Employees Handbook and the Companiess policy on Fire, Hygiene, Health and Safety. To ensure accurate maintenance of recipes, conversion recipes, yield tables and product specifications. To attend weekly Food & Beverage Meetings. To ensure that all meetings are well planned, efficient and result oriented. To conduct daily operations briefing with the Operations team. Human Responsibilities: Coaching and counseling all staff when applicable. Motivate staff to grow within the company.
